Based on the age of the book it really could only be an AMT model that someone modded. Even knockoff Enterprise toys would have been a few years away. (In fact, apart from the AMT kits and the View Master reels, even the official licensed Star Trek merchandise looked like cheap knockoffs until 1973 or so.)
Your comment about Project SWORD inspired deltoid spacecraft makes me wonder about the Delta-V Light Fighter used by raiders in many episodes of B5. Almost an open source fighter design in the setting, used by many different raider factions and small militaries.
